Flavor Profile

Beyond the label

After years of working for one of Australia’s top estates, Salvatore ‘Sam’ Trimboli has struck out on his own with fabulous results. No surprise there—he’s one of the country’s best winemakers, with nearly 30 international trophies and just shy of 400 national awards to his name. So, when Sam offered us a special shipment of his flagship white, we jumped to secure it for you.

Inspired by the eight Salvatores in the Trimboli family tree, Sam’s namesake white is pure Trebbiano (aka Ugni Blanc). Like the Trimboli family, Trebbiano originally hails from Italy but has found a happy home Down Under. Thanks to New South Wales’ hot, dry growing season, the grapes achieved serious ripeness and flavor concentration. As a finishing touch, Sam treated the wine to four months in French oak barrels.

The resulting wine is one of the most elegant, complex Trebbianos we’ve tasted. You, too, will be impressed by the wine’s ripe citrus-fruit flavors, plus the creamy/nutty nuance imparted by the oak aging. Enjoy a refreshing glass on its own or serve with Italian-inspired cuisine (like white pizza or alfredo-sauced pastas) or fresh seafood dishes.
