Beyond the label

Cabalié is the wine to drink after a long day of empire building. Or just a long day at the office. Either way, this sumptuous red hails from southern French star Hervé Sabardeil (below) and is made in the image of the local reds that reportedly bolstered Roman soldiers over 2,000 years ago.

Speaking of ancient, the village where Hervé’s Grenache vines grow, Maury, is home to some of France’s oldest vines. These low-yielding plants produce seriously concentrated grapes, which translates to major flavor impact in your glass. And with Hervé’s remarkable talent (and history of acclaim), this wine is sure to delight.

Cabalié is an intensely flavored blend of Grenache (70%), Syrah (20%) and Carignan (10%), so you’re in for generous layers of chocolatey, sun-drenched berry flavor. It’s a ripe red that’s great on its own and especially delicious with barbecue or any rich, full-flavored fare featuring a dark or fruit-based sauce.

As Hervé says, “Cabalié needs no ceremony, just big glasses to swirl the wine and transport yourself to the rugged hillside vineyards of my region.”
