Flavor Profile
This is the finest cuvée from Domaine B&B Bouché, a top estate in France’s southern region of Limoux. It was founded by fifth-generation winemaker Bruno Bouché after he left the family’s Champagne house (established in 1920) in the capable hands of his brother.
With such an impressive heritage, it’s no surprise our customers can’t get enough of Bruno’s Crémants (the name for sparkling made in the traditional method outside the Champagne region). Le Calme is his Tête de Cuvée, the term in Champagne for a producer’s finest bubbly made with only the first pressing of grapes. This cuvée features his hand-harvested Chardonnay, Chenin Blanc and Mauzac from the estate’s sustainably farmed, HVE3-certified vineyards.
After fermentation, Bruno uses a blending expertise inherited from his ancestors in Champagne. This assemblage is truly an art, particularly difficult for sparkling wine producers using the traditional method (like Bruno) who must find harmony while anticipating the effects of the second fermentation in the bottle and aging in the cellar.
This elegant sparkling wine offers invigorating pear and citrus notes, which glide along a creamy complexity and fresh, persistent bubbles.
