Flavor Profile
Walk into any bistro in Normandy, on France’s northern coast, and you’ll find a carafe on every table. But it’ll be filled with cider (or cidre, as the French say), not wine. Why? This far north, it’s too chilly to grow grapes, but apples thrive. No wonder Normandy has been home to the world’s finest ciders for centuries.
Cider runs in the blood of Xavier d’Audiffret Pasquier’s family. They’ve been crafting it at Château de Sassy since 1852. But Xavier and his business partner, Pierre-Emmanuel Racine-Jourden, are taking quality to new heights, while introducing sustainable farming and stylish new bottles.
And you’ll be among the first in the U.S. to taste their elegant Brut release. It’s vegan and all-natural—made with 100% apple juice from a top-secret blend of 22 different local varieties. Brilliantly balancing lightness, freshness and fruitiness, it has moderate alcohol (5.2% ABV) and is low in calories (only 70 per serving!). Look forward to leap-from-the-glass aromas and flavors of ripe apple—of course—citrus and caramel, plus a fine effervescence.
Best served chilled, it makes a perfect aperitif for brunch (or anytime) and is equally delicious with aged cheeses or richly sauced chicken, pork or fish.
