Flavor Profile
Chapel Hill has been an institution in Australia’s McLaren Vale since the 1970s. However, its wines are anything but old fashioned. Exhibit A: The Prophet by Chapel Hill, a rich, medium- to full-bodied Cab that offers ample mulberry, black currant and cigarbox flavors held nicely firm tannins and accented by chocolate tones.
Established around an Australian landmark—an old 1800s chapel—in 1972, Chapel Hill’s first landmark moment came a few years later, when its owners hired Pam Dunsford to be its chief winemaker.
A legend of Aussie wine, Pam was the first woman admitted to the Oenology program at Roseworthy Agricultural College, the first female winemaker to become a wine show judge, the first woman to hold a prominent winemaking position at a large corporation, and one of the first women to be a wine educator and consultant in Australia (to name a few achievements).
At Chapel Hill, she was instrumental in building the winery into a widely acclaimed name and taking the first steps towards sustainability.
Today under the guidance of Chief Winemaker Michael Fragos and Senior Viticulturist Rachel Steer, the winery has become an area leader in sustainability, prioritizing soil, vine health and fruit quality through regenerative agriculture, organic-growing principles and accredited sustainable winegrowing practices.
